Summer in Aspen is so fantastic. The weather couldn’t be better, and the fresh produce is finally here. 

Wild salmon is my protein of choice these days, and I’m doing my best to try as many red burgundies as possible to pair with it! I keep coming back to the 2009 Marius Delarche “Les Boutieres” Pinot Noir from Pernand-Vergelesses. 

Young and exuberant, it smells and tastes like raspberry and cranberry, with hints of citrus fruits.  It is very fresh and lively on the palate and complements the peach salsa I’m making to go with the salmon. 

Because it’s from the less fashionable commune of PV (per-non ver-geles), it offers great value. So you can buy this one by the case! (Importer: North Berkeley)
