The Little Nell’s General Manager Simon Chen was previously the General Manager at Rancho Valencia Resort and Spa in Rancho Santa Fe, California. He studied at the Hotel School at Intercontinental in Sydney and has been in the hospitality business since 1990, working for independent hotels as well as The Ritz-Carlton in locations around the world, including mountain properties such as Bachelor Gulch, Telluride and Vail. Chen worked at The Nell in the mid-90’s as Front Office Manager and Assistant Guest Services Director.
Moscatello recently returned to The Little Nell as executive chef (he served in the position from 1992 to 2000 before working at a variety of acclaimed restaurants around the country, including Storefront Company in Chicago and Adega Partners in Denver). He was recognized by Food & Wine magazine as one of America’s Ten Best New Chefs and has made Esquire’s Best New Restaurant list twice. When not in the kitchen, you can find him snowboarding on one of Aspen/Snowmass’ four mountains, spending time with his family or mountain biking.
Carlton McCoy was named wine director of The Little Nell in July 2014, marking an incredible rise through the food and wine industry that began with a high school culinary program for underprivileged youth. He is one of the youngest people in the world to have earned the master sommelier diploma and is the second African American to do so. Just 29 years old, Carlton earned his master sommelier diploma in May, joining an elite group of wine professionals who have achieved the highest distinction afforded in the wine industry.
