House Champagne at Element 47

Every restaurant needs its own house wine. With the upcoming opening of Element 47 at The Little Nell, we figured what would be better than bubbles?

Our wine team (Master Sommeliers Jonathan Pullis and Sabato Sagaria, as well as Advanced Sommelier Carlton McCoy) took the task of selecting a house champagne very seriously. They wanted something different. Something exclusive and fun, that was also a good value and food friendly.

After tirelessly tasting (it’s rough to be our wine team), they settled unanimously upon Marc Hébrart “Sélection” Brut, N.V. – Vallée de la Marne // Mareuil-sur-Aÿ and worked to create a label specifically for Element 47.   

The champagne is a blend of pinot noir and chardonnay. “The chardonnay adds structure and acidity while the pinot adds weight,” said McCoy. The wine team describes the bottle as elegant champagne, without any “oak” so it can go well with first courses or as an aperitif.

“We wanted a champagne that was super versatile,” McCoy said. “We needed it to be food friendly because a lot of guests choose to carry their champagne from the bar to pair with their first course.”

The wine team is excited to share a lesser-known champagne with guests at The Little Nell, touting the fact that Marc Hébrart “does it all” from growing the grapes to making the wine to shipping it.

The producer knows everything about the wine since the very plots and vineyards it comes from are farmed by the family themselves.

“At Element 47, we’re all about Colorado ingredients and food and being as hands-on as possible, so this wine will really complement that ethos,” McCoy said. “I can’t wait to share it with our guests.”
